Antioxidative Properties and Phenolic Profile of the Core, Pulp and Peel of Commercialized Kiwifruit by LC-ESI-QTOF-MS/MS

The kiwifruit is cultivated globally due to its diversity of phytochemicals, especially phenolic compounds, which have antioxidant, anti-inflammatory and anti-cancer medical effects. However, only the pulp consumed, while peels cores—which are also rich in phytochemicals—are usually wasted. Meanwhile, detailed information on comparison among three parts still limited. In this study, antioxidant potentials core, pulp, peel most commercialized cultivars (Australian-grown Hayward kiwifruit, New Zealand-grown Zesy002 organic kiwifruit) were selected. Their capacities tested, their profiles identified characterized by liquid chromatography-electrospray ionization quadrupole time-of-flight mass spectrometry (LC-ESI-QTOF-MS/MS). results showed that contained highest total content (9.65 mg gallic acid equivalent (GAE) mg/g) capacity (4.43 ascorbic (AAE) mg/g), respectively. addition, generally higher than cores all species, ABTS (2,2-Azino-bis-3ethylbenzothiazoline-6-sulfonic (ABTS) radical scavenging ability), ranging from 13.25 AAE/g 18.31 AAE/g. LC-ESI-QTOF-MS/MS tentatively compounds present including 118 unique peel, 12 cores, pulp. comprehensive characterization phenolics kiwifruits’ indicates importance waste part as a promising source with properties. Therefore, study can guide industry meaningful waste, provide it utilization food pharmacological aspects.
